Baking Magic at the Kent Country Show with Leo & Claudio

This August, the Kent Country Show at Quex Park provided a vibrant and family-friendly backdrop for our hands-on baking demo, where I had the pleasure of collaborating with the talented chefs Leo and Claudio. Set amidst the cheerful bustle of the show’s free-roaming dogs, happy families, and tranquil gardens, our session offered a slice of culinary delight to show-goers Kent Country Show.

Low-Knead Dough: Effortless and Rewarding

We began by introducing the crowd to the beauty of low-knead dough—a method ideal for both busy home bakers and culinary enthusiasts alike. With minimal effort, we mixed a simple combination of flour, water, yeast, and salt, allowing time to develop gluten through rest rather than intensive kneading. This relaxed approach not only made breadmaking approachable but also showcased how patience can yield superb texture and flavour.

Crafting Classic Roll Shapes

Once our dough was ready, I demonstrated the art of shaping classic rolls – shaping the dough into rustic buns—perfectly scaled for a picnic or as accompaniment to a hearty meal. The audience got an up-close look at how simple folds and gentle shaping transform dough into beautifully comforting forms.

Stretching Out the Pugliese Focaccia

I then took them on a journey to southern Italy, introducing the signature Pugliese focaccia. Using the same low-knead base, the dough was stretched and dimpled in a baking pan, brushed with olive oil, and adorned with roasted potato, sea salt and rosemary. The fragrance that wafted through the air was irresistible—a fragrant, golden-crusted bread with a soft, porous crumb that had everyone inching forward for a closer look.

A Community Moment of Taste & Tradition

Throughout this demonstration, Carole engaged warmly with visitors—answering questions about hydration, timing, and ovens, and encouraging everyone to experience the dough for themselves. The result? A lively, interactive moment that blended tradition with creativity, showing how simple techniques can bring people together through food.

Whether you’re an experienced home cook or a curious first-timer, our low-knead method, roll-shaping tips, and Pugliese focaccia technique provide a delightful starting point for exploring the pleasures of artisanal baking.
