From Confused to Confident: Understanding Baker’s Percentages Made Easy

🧮 Baker’s Maths Made Easy (and Fun!)

Ever wondered how professional bakers whip up perfect dough every single time, scaling up or down without a fuss? Their secret isn’t magic—it’s baker’s maths!

Also called baker’s percentages, this method turns your recipe into a flexible, foolproof formula. Once you understand it, you’ll never look at a bread recipe the same way again. Let’s break it down with some easy examples and a pinch of good humour.

🥖 What Is Baker’s Maths?

In baker’s maths, flour is always 100%, and every other ingredient is measured as a percentage of the flour weight, not the total dough weight.

Think of flour as your baking anchor. Whether you’re making 500g or 5kg of dough, this method keeps the proportions just right.

🔢 Why Use It?

  • Scale up or down easily (home bake to banquet, no problem).
  • Tweak recipes intelligently (want a softer crumb? Try more water!).
  • Perfect for planning demos or courses (hi 👋 Martin!).

🧁 The Basic Formula

IngredientPercentage
Flour100%
Water (Hydration)60–80%
Salt2%
Yeast0.1–2%
Optional: Oil, sugar, etc.Varies

🍞 Example 1: Classic White Bread (500g dough)

Let’s say you want 500g total dough. Use baker’s maths to reverse-engineer your ingredients.

Target formula:

  • Flour = 100%
  • Water = 65%
  • Salt = 2%
  • Yeast = 1%

Total percentage = 168%

To find the flour weight:

Flour weight = Total dough weight ÷ Total percentage
= 500g ÷ 1.68
= 297.6g

Now use percentages:

  • Flour: 297.6g
  • Water (65%): 193.4g
  • Salt (2%): 6g
  • Yeast (1%): 3g

Boom! There’s your recipe. Scale it to 1kg or halve it for a solo sandwich loaf.

🫓 Example 2: Flatbreads with 80% Hydration

Want soft and bubbly flatbreads? Boost the hydration!

  • Flour: 100%
  • Water: 80%
  • Salt: 2%
  • Yeast: 0.5%
  • Olive oil: 5%

For 1000g dough:

Total % = 100 + 80 + 2 + 0.5 + 5 = 187.5%
Flour = 1000 ÷ 1.875 = 533.3g

So:

  • Flour: 533g
  • Water: 426g
  • Salt: 10.7g
  • Yeast: 2.7g
  • Oil: 26.7g

Perfect for your air fryer flatbread demos!

🍩 Bonus: Sweet Dough Example (Enriched Chelsea Buns)

  • Flour: 100%
  • Milk: 60%
  • Butter: 15%
  • Sugar: 12%
  • Egg: 10%
  • Salt: 2%
  • Yeast: 2%

Let’s say we want 1000g dough:

Total % = 201%
Flour = 1000 ÷ 2.01 = 497.5g

Then:

  • Milk: 298g
  • Butter: 74.6g
  • Sugar: 59.7g
  • Egg: 49.8g
  • Salt: 9.9g
  • Yeast: 9.9g

Now you’ve got enough Chelsea bun dough to win a village fete.

🤓 Pro Tips

  • Always weigh ingredients, even water and salt.
  • Use digital scales (precision matters).
  • For sourdough, subtract starter hydration from water and flour calculations.
